Herbs

The grounds of NYMPHES are lush with thyme, oregano, myrtle, laurel, rosemary, lavender, mint, dittany, basil, sage, laudanum, marjoram, lemon verbena and other medicinal and fragrant herbs and shrubs. We encourage our guests to use them in their cooking. We have many varieties of grapes that our guests can enjoy straight off the vine, while hanging from the arbors. Our fig trees offer luscious, ripe, sweet fruit in the summer, and our plums are juicy and honey-sweet. Guests who arrive in fall can enjoy fresh quince, or join us in harvesting grapes for our homemade wine. In addition to the cultivars, there are more than 500 species of wild plants and flowers in the surrounding hills.
